Making an onion syrup
Ingredients
1 large (or 2 small) onions
450g/1lb brown sugar or clear honey
1 jar
Method
- Peel and slice the onion.
- Put 3 to 5cm (1 to 2 inches)
onion in bottom of jar.
- Cover with 3 to 5cm (1 to 2
inches) sugar/honey.
- Fill jar with alternating
layers, pressing each layer down firmly
before adding more. Cover last layer of onion with a thick layer of
sugar or honey.
- Leave overnight.
- Strain off liquid and throw
away any undissolved sugar left at
bottom of jar.
- Bottle and label.
- Store in cool, dark place.
Keeps for about two weeks.

- Fights off colds.
- Anti-infective, soothing,
removes catarrh from chest.
- Will help relieve chest
infections.

- Use any onion. Red onions
are milder and more soothing, so
particularly good for children.
- Try making syrup from any
other juicy plant.
- Garlic (2 whole heads in 1lb
honey) - particularly good for chest
infections.
- Ginger - warming, loosens
phlegm, clears catarrh, prevents
chills, ?pick me up?, stimulates immune system.
